This stone easy to use and an ideal fineness for polishing and sharpening of kitchen knives. It draws black shavings very quickly and is not grabby or glassy in use. It is fast and will leave a very well contrasted kasumi polish with detail in core and cladding. It is a wonderful place to stop for polishing and sharpening or a great bridge from coarser suita like Maruo to the finest stones such as Nakayama kiita.
Aesthetics & Other Notes
This suita has a cream base with exceptional red momij (large renge basically) throughout the stone. The stone is almost entirely sunashi and has no toxic areas at the surface.
Ohira (大平, Oohira, Ohirayama)
A Western mine famous for Uchigumori and the quality of its suita. Although the mine is still occasionally worked, it is increasingly challenging to find uchigumori and Ohira suita available for export. Reportedly, many togishi are worried about the long term supply of quality uchigumori stones. Due to the premium that comes with Ohira suita and uchigumori, many less scrupulous sellers will attempt to pass off stones from other mines as Ohira.
