Ikarashi are easy to use mid-grit stones that offer a good balance of bite and refinement for kitchen knvies. They are characterized by their pale blue color with swirls of darker coloring. As polishers, they are useful for cleaning synthetic scratches from core steel and leaving a base polish for softer Kyoto-area stones. They will leave a visible, but consistent scratch pattern in soft cladding. Ikarashi are roughly 2.5k in grit.
Due to their similar appearance, Ikarashi are frequently compared to Aizu. Ikarashi are softer, easier to use but have a lower level of refinement in both polish and edge.
